Coconut Balls
Makes 4 balls
2 tablespoons coconut oil
1 scoop protein powder
1 tablespoon sunflower seed butter
3 tablespoons coconut milk
2 tablespoons ground flaxseed meal
1/2 teaspoon vanilla
1 teaspoon cinnamon
1/2 cup unsweetened shredded coconut
Combine all ingredients in a bowl — EXCLUDING the unsweetened shredded coconut. Line a tray with wax paper. Form the ingredients into little balls. Roll each ball in the unsweetened shredded coconut. Add the balls to the tray, then put into the freezer for 30 minutes to form.

holidaytreatCrunchy Holiday Granola (Monica Eng’s adaptation from Baking Chez Moi)

1 cup of honey

5 T of coconut oil

1 T of vanilla extract

2 Tsp of ground cinnamon

½ tsp of fine seat salt

5 ½ cup of old fashioned oat meal (use GF of you prefer)

1 ½ cup of raw almonds or cashews raw or whole

1 cup of shredded coconut

1 cup dried cranberries or cherries

Preheat oven to 325 use two 9×13 pyrex baking pans or rimmed cookie sheets.

To create spice syrup melt coconut oil and honey together in a pan and stir. Take off the heat, add cinnamon, vanilla and salt, stir. In a large bowl, mix oats and nuts. Pour the syrup over the oats & nuts, stir with a wooden spoon until nuts and oats are coated.

Divide mixture into two pans, place in the oven for 45-60 minutes. After about 20 minutes flip everything over and scrape what’s stuck. Do again after another 20 minutes, than add the coconut evenly. Bake another 5-15 or until the oats are a toasty golden brown.

When take granola out scrape into a heatproof bowl, stir in dried fruit. When it reaches room temperature break into clumps you like. Enjoy!

From About Food, this is a quick and easy recipe for a raw vegan “cookie” from just three ingredients. Just whip together in the food processor and enjoy! You won’t believe how yummy (and easy!) these raw vegan cookies are! Be sure to use raw and living ingredients for these cookies to be truly raw. You can use just about any kind of nuts, as long as they’re raw. Dates would also work well instead of raisins.

  • 3/4 cup raw walnuts, cashews or pecans
  • 1/4 cup raw carob powder
  • 1 cup raisins


Process all ingredients in a food processor until fine and sticky. Shape into balls and enjoy!

If you can’t get the mixture to hold together, add a few more raisins and a tablespoon of water.

Chocolate Coconut Energy Bites

2/3 cup cashew butter
1 1/2 tsp cinnamon
2 scoops chocolate protein powder
1/2 cup coconut flour
1/4 cup pumpkin seeds
2 tbsp unsweetened cocoa powder
3 tbsp unsweetened shredded coconut
1/2 cup water
  1. Crush pumpkin seeds to desired consistency.
    2. Combine all ingredients in medium mixing bowl.
    3. Scoop into balls and place on cookie sheet.
    4. Chill in refrigerator for several hours.
